Quinoa and Fruit Breakfast Bowls

Ingredients

  • 2 cups water
  • 1 cup quinoa
  • 1/4 cup apple juice or cider
  • 3 tablespoons reduced-fat creamy peanut butter
  • 1 small banana, chopped
  • 2 tablespoons raspberry or strawberry spreadable fruit
  • 4 teaspoons unsalted, blanched peanuts

Instructions

  • In a medium saucepan combine the water and quinoa. Bring to boiling; reduce heat to medium-low. Cook, covered, for 10 to 15 minutes or until water is absorbed. Remove from heat. Add apple juice and peanut butter, stirring until combined. Stir in banana.
  • Divide mixture among four bowls. Add a spoonful of spreadable fruit to each serving; top with peanuts.
